We use exclusively natural cocoa powders (often referred to as cacao powder) rather than Dutch‑processed powders. Dutch processing is a chemical treatment that alkalises the cocoa to darken its colour and neutralise acidic notes, often flattening flavour. Because of the purity and naturally expressive character of the cocoas we grow and source, we avoid alkalisation to preserve their full depth and authenticity, resulting in a more honest and real cocoa experience.
