75% Mocha Sauce:
1 Shot Espresso
15g 75% Chocolate
45% Powder Chocolate Milk:
20g 45% Powder
10ml Freshly Boiled Water
120ml Whole Milk
White Chocolate Foam:
10g 37% White Chocolate
60ml Double Cream
30ml Whole Milk

Make the white chocolate foam ahead of time. Heat the milk and chocolate together and mix to a smooth paste, add the cream, mix and set aside in the fridge to chill. Whisk just before serving until thickened and light.
To the make the mocha sauce, brew your espresso shot directly over the chocolate and mix until smooth. Fill the bottom of your serving glass with the mocha and set aside while you make the chocolate milk.
To make the milk, make a smooth paste with the powder and freshly boiled water, add the milk and mix until smooth. Pour the milk over the mocha sauce before topping the cold foam and a generous dusting of cocoa powder.
