Some recipe collaborations just WORK. With the launch of our Summer #ChillwithIslands recipe series, we couldn’t have been more excited to reach out to some of our good friends and partners to elevate these summer coolers with delicious collaborations.

One of which was the amazing team at Good & Proper, a specilty tea supplier based in London which offers a vast array of award-winning, premium quality loose leaf, tea bags and tea accessories. When Islands’ development chef, Cat, first brewed up this recipe we knew we had to pick up the phone to get an express delivery of Earl Grey tea bags!

Earl Grey Syrup
- 200g Water
- 10 Good & Proper Earl Grey Tea Bags
- 1 Orange
- 120g Caster Sugar
32% Powder Milk
- 360ml Whole Dairy/Dairy-Alterative Milk
- 25g Islands Chocolate 32% Powder
Orange Cream
- 30ml Double Cream/ Dairy-Alternative Cream
- Zest of ½ Large Orange
For the Earl Grey Syrup
- Start by making your earl grey syrup in advance, slice the orange thinly and infuse the water with the tea bags and orange slices for 5-10 minutes over a gentle heat.
- Once infused, remove tea bags, strain and return to the heat, add the sugar.
- Heat further to dissolve the sugar and continue heating to reduce the syrup to a nice and thick consistency. Set aside to cool completely before using.
For the 32% Chocolate Milk
- Heat 50ml of your milk any way you choose until steaming
- Whisk into the 32% Hot Chocolate Powder and mix until smooth.
- Finish with the rest of the milk and chill down before serving.
Build the drink
- To serve, pour the syrup over ice
- Pour over chocolate milk and top with the optional orange cream
- Enjoy!
Optional extras: add a generous splash or squirt of double cream and zest of the orange to finish.
